茴香酒

茴香酒(英語:Anisette,或Anis)是一種茴芹風味的力嬌酒,主要消費市場在地中海地區,包括法國意大利西班牙葡萄牙土耳其等地。與某些茴香風味的酒不同,茴香酒是透明無色的,且不含甘草[1]真正的茴香酒是通過蒸餾生產的[2]。傳統法國茴香酒(Pastis)口味與茴香酒差不多,然而是通過浸泡生產的,並且含有茴香籽和甘草。珊布卡是意大利版本的茴香酒。

茴香酒比大多數茴香味力嬌酒要甜,因為釀製過程中會加入糖漿。因為度數很高,直接飲用茴香酒時刺激性很強,甚至會造成喉嚨不適,因此建議兌水慢慢飲用。茴香酒可以與別的飲料勾兌飲用,產生可接受的、帶淡淡甜味的味道。通常將茴香酒與水混合飲用,混合後會乳化成乳白色濃稠液體。在西班牙語中稱之為「palomita」。需要將酒和冰水同時倒入杯子中,如果只是將酒倒入水中,那麼效果是完全不同的。混合後的酒水越白,說明茴香酒的品質越好。
